It doesn't. It is easy and you can do it too.
I should have taken pictures as I prepared the Pumpkin Roll but this was the day of "what NoT to do". Remember? Totally can't be taking pics on a day like that...
I did get one of the finished product though.
Pumpkin Cake Roll
3 eggs
1 c. sugar
2/3 c. pumpkin
1 tsp. lemon juice
3/4 c. flour
1 tsp. baking powder
1/4 tsp. ginger
1 1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt
1 c. nuts-optional
Filling-
1 c. powdered sugar
6 oz. cream cheese
4 T. butter
1/2 tsp. vanilla
Beat eggs at high speed for 5 minutes. Gradually add sugar. Stir in pumpkin and lemon juice. Combine the dry ingredients and fold into egg mixture. Spread in a greased and floured (I use the shortening and flour spray) 10 x 15 x1 inch pan. Top with nuts (I don't, guys don't like them.) Bake at 375 degrees for 15 minutes. Turn onto a lint free towel, sprinkled with powder sugar. Start rolling at narrow end; let cool. Beat filling until smooth. Unroll cake and spread filling on cake; reroll, chill, slice to serve. I serve with a bit of whippped cream.

Kathi broke me into the pumpkin roll recipe years ago - love it! Love your Christmas dishes too - I suppose this means you don't buy the pretty patterned paper ones :-)! I just splurged and bought a set of 12 dinner and salad plates from 2nd chance. They are from Pier1 and are a gorgeous golden yellow color with distressed edges. Can't wait to use them. One can never have too many dishes!! I have Christmas ones too!
